Ingredients
- 2 eggs
- Small red onion
- 1 avocado
- Small bunch coriander
- 125g cherry tomatoes
- ½ red chilli
- 1 tin mixed beans
- ½ lime
- ½ lime
Step 1 :
Place the eggs in a pan of boiling water and boil for 7-8 mins before placing into cold water to cool.
Step 2 :
Peel and finely slice the red onion. Destone and slice the avocado. Roughly chop the coriander and halve the tomatoes. Deseed and finely slice the red chilli.
Step 3 :
Rinse and drain the beans.
Step 4 :
In a large bowl combine the beans, avocado, onion, tomatoes and coriander.
Step 5 :
Juice half a lime and mix in a small bowl with the chilli and the cumin.
Step 6 :
Peel the shells off the cooled eggs and cut into quarters.
Step 7 :
Toss the salad with the dressing and add the eggs on.
